What is the best way to transport an old Ford about 2,000 miles?

Enclosed car trailer. No flying stones to worry about that way.

Are you aware of anyone who provides this service?

The decision largely rests with the value of the car. A number one grade show car should be handled by a professional company in a closed van, with a price tag to match. Most others can be safely transported on a trailer, such as the common U-Haul type, providing the weather is non threatening.

Drive it!!! But seriously a bit more information might help. Is this a project vehicle you bought/sold or something you want to bring to a show? The more specific your details the better answer people here can give.

It is an original condition, low mileage Ford Sedan from the 1940s to be transported from Minnesota to coastal California. It is drivable but it's roadworthiness for a trip of any length is totally unknown.

If it's a real nice original spend the extra money and hire an enclosed carrier.
