Have an 8BA in my '36 & will use electric fan; do I want sensor to come on at 170 off at 185 or on at 200 off at 185 degrees?

I would set the relay to match the thermostat rating. If you use 170 degree thermos, set it at that level to aid warmup. Your post indicates a shutoff at 185 degrees, but we install a bypass switch to keep the fan running if needed in slow traffic, parades, etc. I'm not impressed with the efficiency of electric fans, and if it shuts off at 185, I doubt it would catch up above that level. If you don't need it, just don't use the bypass switch.
