"cook" them out, have them checked for flatness, use the composite head gasket , spray copper coat on both sides of the gasket

Have the heads resurfaced at a machine shop that knows how to do it without removing excess material. Almost all old heads have some warp, then be sure to tighten the nuts in the proper sequence from the center to the ends. Cast iron is surprisingly easy to bend. That is why we use a special jig to hold the block together when we bore it. Be sure you have the correct head gaskets, and that they match the water holes in the head. The original design was changed to permit better water flow. If you are unsure, I'll post photos.
