You looked in the right place. It's not a required part for a flathead Ford, so many guys leave them out to allow a free flow of coolant. The flathead is notorious for overheating, but I guess you have already discovered that piece of trivia. Alan

The usual reason for keeping thermostats is to create a slight pressure in the water jackets is to reduce steam pockets and, of course, to help get the engine up to operating temperature sooner. Finding the stats missing in your car may indicate that someone removed them due to a tendency toward overheating. It is likely that the cooling system is poor, starting with an old radiator. If you plan to put thermostats in, I'd opt for the 160's.
