I’ve been told that the canister style bypassing oil filter on my ‘50 v8 is just for show and doesn’t do much and I need to convert to a full flow cartridge style for good filtering. True? How efficient is the bypass type? Doesn’t it clean all the oil but not in one pass from the oil pump?

You've been told wrong. The Ford bypass filter is an excellent system that needs no updating. Pull a search on the topic for your own education and don't listen to the fools flapping their lips. Alan

I recall reading somewhere that someone took the time to measure how much oil actually moves thru the by-pass filtering system. Was something like a quart per minute at driving RPM. So, in just five minutes of driving the entire oil quantity runs thru the filter. Seems like that would be doing some good.
