  My steering wheel on my 47 Ford is off center when the wheels are straight.
Is this adjustment accomplished by adjusting the drag link?

  Any good alignment shop can center the steering wheel for you. It's also not too hard to do yourself but several test drives might be required. I did mine and believe it or not the "crown" of the streets will affect it. Yes the drag link is the part you need to adjust.

  As has been stated, yes, you can adjust this yourself and yes, do so with the drag link. I'd suggest creeping up on the correct position - perhaps turn the tie rod end one revolution at a time. The crown of the road will effect the centering of the wheel if the front chassis is worn and or the steering gear is worn and / or not adjusted correctly. .
