Greasing the fittings , does anyone use corn head grease ? Sold by John Deere? It would seem like it would be best as I used it on universals on MODEL A fords when I had one. Now have 41 ford.

On your 41 Ford just use a good grade of chassis grease. Cornhead may be fine for the universal or a steering box, but the suspension parts should have a grease that is not changed by temperature or pressure exerted by suspension parts

Would mobile grease or valvoline be a good one to grease car ?

I use Mystik JT-6 grease for everything accept wheel bearings. It is waterproof and sticky, and is often used for boat trailer wheel bearings.
