Does this exist anywhere? Something that would show things like how to remove back seats, steering boxes, etc, etc. I'm looking for something like the shop manuals but for body parts. I would like to make sure that my dis-assembly and reassembly doesn't screw up good parts.

I have never seen anything akin to what you desire. With decnt mechainical skills most of the body and interior components are readily removed.
If you need any specific advice, please let me know.

The restorers best friend is a handy digital camera. Most of us don't have the time or memory to span the time it takes to reassemble the vehicle. Having photos is an irreplaceable aid to knowing what goes where.

You should also take the time to print the photos and label them. Then file them in envelopes with the area of the car written on the outside. This may seem like overkill in the beginning, but sometimes a restoration can hit snags that extend the time for completion out a couple of years. Then you will appreciate this labeling.

It is also a good idea to take photos as you progress through the restoration. It will give you a lot of pleasure to review those photos later.
